Flapjacks are British energy bars. They are made with the same ingredients but the British always need to be so fancy so do yourself a favour and try these oh so delicious treats. Made with dates, walnuts and pistachios with a hint of cinnamon and rose petals 🍂
~Put 140 gm butter, 100 gm soft brown sugar and 2 tbsp of honey in a small pan, then heat gently until melted.
~Tip 159 gm rolled oats, 75 gm chopped pistachios (I added half cashews), 140 gm chopped dried apricots (I added 1/4 dried figs) into a medium bowl. Pour over melted butter mixture and combine well. •
~Transfer to a greased and lined baking tray and cook at 140/160 degree Celsius, gas mark 4 for 35/40 mins.
~Remove and let it cool in the tin. Slice into 16 bars and keep in an air tight container for up to 3 days.
