MARMITE TORTILLA WRAPS

Made tortillas at home <250gm corn flour, 250gm flour, 2.5gm sugar, 7.5gm salt , 25ml salad oil, 15gm yeast, 200ml water> which are super easy because you mix all the ingredients together and knead the dough. Cut 100gm balls, roll them out to 1/4 inch and then cut using a ring of your desired size. Bake at 250*C for 2-3 mins or cook on the stove on high flame. .
I marinated two chicken breasts with 2 tbsp of marmite, chopped ginger, garlic and green chillies. I gave it some colour on the grill and finished it off in the oven (wrapped in foil). It was cooked in 20 mins and had a lovely umami flavour.
The assemblage;
Instead of mayo I used a hung curd and dill dip for the creaminess and a dollop of homemade pommery mustard for the kick! On top I added the lettuce leaves and then the diced chicken. Seasoned it with pepper and lemon juice. I cooked some bacon, chopped it to bits and sprinkled it on top. .
The recipe that I got inspired from the #marmitecookbook by #paulhartley had avocado in it but since I didn’t have any I freestyled and it tasted great! The marmite marination actually gives the chicken a very barbecuey flavour and the best part is it doesn’t need any salt because marmite has a very high sodium content.
