I’ve always loved bell peppers ever since I got to know you can eat them raw so they became a blind addition to my salads. They also have a great vitamin C content and contain a good amount of water so they’re basically good for you. My mom and I decided to make bell pepper cups which turned out to be pretty fab ! .
Ingredients; served 4-6
~3 bell peppers ~200gm grated fresh cottage cheese (paneer)
~1 cup boiled quinoa ~4 haved cherry tomatoes ~salt and pepper to taste ~8 tomatoes
Method; ~Cut The bell peppers into two from the middle, horizontally and keep aside. ~make a diagonal cut on top of each tomato and boil them. Peel the skin off and purée them in a blender. Sauté garlic in a pan and add the tomato purée. Cook for 5-7 minutes and season with salt, oregano and chili flakes for a kick. You can add minced meat to the tomato purée for a meatier substance. ~you can sauté beans and broccoli and add them to the mix. ~Fill the tomato purée and quinoa into the peppers. Add the cooked vegetables if you want. Fill in the grated paneer (or cheese if you’re feeling indulgent) and stuff a cherry tomato in the middle. ~All the ingredients are cooked so you just need to put it in the oven for 20 minutes at 180*C so that the paneer gets grilled. Serve warm with and soup of your choice and feta cheese
